What is one food that you can incorporate into your diet every single day and never get tired of?

For me, that is mushrooms.  Did you know that mushrooms are the superfood of the month for September and October per Sam’s Club’s Healthy Living Online Magazine? I am excited to share with you a recipe for easy mushroom tacos that I created from this fabulous superfood and how Sam’s Club helped me out! Sam’s Club a great place to stop in for all of your healthy living needs, especially for your weekly meal prep since they have so many fresh meats and fish in bulk for getting outdoors and grilling on your meal prep Sundays! If you are a Sam’s Club member or future member, you can get a free health screening at select clubs on the second Saturday of every month. The next one is October the 8th so be sure to check it out as well as their online Healthy Living Magazine – it has some really great reads!

Mushrooms are my filler of choice for so many recipe staples and my favorite Vitamin D-packed veggie…or fungi, rather. The beauty of the mushroom is its ability to go into pretty much any meal.  On my menu lately? These delicious and flavorful mushroom tacos.




I added onions and peppers to add color and texture to the taco filling. I was able to find all of my veggies for the taco filling at Sam’s Club.


What really makes these tacos is the fresh avocados and heirloom tomatoes for the topping. These are best served on hot corn tortillas fresh out of the pan and topped with the avocado and tomatoes.


I have had so much fun using mushrooms for many different staple recipes during the week –they are so versatile!

I love to take the leftover filling and use it for breakfast topped with a fried egg.  I am all about versatility and ways to reuse dinner ingredients -for breakfast, lunch or snack time!

  1. Drizzle the olive oil in a large skillet over medium high heat.
  2. Add the sliced mushrooms, peppers, and onions and let them saute for 15 minutes until they soften and brown.
  3. Add tamari, smoked paprika and garlic. Continue to saute for 2-3 more minutes.
  4. Warm corn tortillas and fill with the mushroom mixture.
  5. Top with sliced avocado and chopped heirloom tomatoes.

  1. Spinach is my favorite, I think it was last months HLMS superfood! I love the recipes and healthy tips that the online magazine shares! I get a lot of inspiration from it. I definitely want to try your mushroom tacos, they sound delicious!
